Finding properly made varenyky or pelmeni in Bali is not easy. Most places that serve them use frozen dumplings — commercially produced, consistent in a factory sense, but lacking the texture and flavour that comes from dough made fresh and shaped by hand.

What Are Varenyky and Pelmeni?
For those who have not encountered them before:
Pelmeni are Russian dumplings — small, tightly wrapped parcels of fresh dough filled with seasoned meat. Boiled and served with sour cream, butter or a light broth. At their best, the dough is thin and silky, the filling is juicy and well-seasoned, and the result is deeply satisfying.
Varenyky are Ukrainian-style dumplings — slightly larger, with a wider range of possible fillings including potato, cottage cheese, sauerkraut with mushroom, or fruit. They have a softer, more pillowy texture and are often finished with caramelised onion and sour cream.
Both are the kind of food that connects people to a place and a memory. Both are worth eating when made properly.
Why Handmade Makes the Difference
The difference between a handmade dumpling and a frozen one is not subtle. It is the difference between fresh pasta and dried pasta — both are pasta, but the experience is entirely different.
Fresh dough has a texture that freezing destroys. The thin, slightly elastic wrap of a hand-formed pelmeni, biting through to a filling that is still juicy — this cannot be replicated from a packet. The filling matters too: made fresh, properly seasoned, with the right balance of fat and seasoning.
How We Make Them
Our process starts with fresh dough — made in our kitchen, rolled to the right thickness, cut and filled by hand. The filling is prepared in-house. Every dumpling is shaped individually by our team, who know exactly what the finished result should feel and taste like.
It is time-consuming. It is also work that shows up clearly on the plate.
