Wagyu has become one of the most searched-for items on Bali restaurant menus. And for good reason — when it is done properly, wagyu is an exceptional piece of meat. The problem is that not all wagyu in Bali is equal, and knowing what to look for will save you from an overpriced disappointment.

What Is Wagyu?

Wagyu refers to specific Japanese cattle breeds known for their high level of intramuscular fat — the marbling that gives the meat its distinctive richness, tenderness and flavour. True wagyu has a marbling score (BMS) that determines its quality, with higher scores indicating more marbling and a richer eating experience.

Not everything sold as "wagyu" in Bali deserves the name. Some restaurants use the term loosely to describe crossbred cattle with relatively low marbling. Others are the real thing.

What to Ask Before Ordering

When ordering wagyu in Bali, it is worth asking:

  • What grade is the wagyu? — A4 and A5 are premium; anything below A3 is worth questioning
  • Where is it sourced from? — Australian wagyu and Japanese wagyu are both excellent, but different
  • How is it being cooked? — wagyu should be cooked to medium-rare or less to preserve the fat structure

How Wagyu Is Best Served

Wagyu is best enjoyed in smaller portions than a standard steak — the richness means a 150–200g serve is often more satisfying than a larger cut. It should be rested properly after cooking and sliced against the grain.
